Weight Watchers has all sorts of cool recipes, even if you don’t participate in their program. One that we discovered is chocolate pumpkin muffins. It’s pretty simple to make. All you do is mix a chocolate cake mix with one can of pumpkin – nothing else is needed. Spoon it into cupcake papers and bake it according to the directions on the cake mix.
The stuff is high in fiber and good for you. More importantly, it make a delicious, moist, chocolatey muffin that is like a party in your mouth when you eat it.
The best part of the fun is when you serve them to people. Don’t tell them what the ingredients until they have eaten it…they will never doubt you are a culinary genius again!

How many cups of pumpkin are in that can? I have lots of pureed sugar pumpkin in my freezer right now and this looks like a great way to use it.
Taylor – The can is 2 cups I think. You will love these things. They are so moist and they stay that way (though they rarely last long enough to be an issue).
Do you add the ingredients for the cake mix? or just one dry cake mix and one can pumpkin?
Hi Cathi – just the mix and the pumpkin…no other ingredients. Seems odd I know but that’s all you need.
Yummy! Makes sense — because you can use the mix with applesauce the same way. Yum!

I love pumpkin and chocolate together. I made a Chocolate Chip Pumpkin cake last weekend and it was delicious!
I like the cakemix idea, easy!
All you need to do is mix the dry cake mix with one 15 oz can of pumpkin. I find that you need to mix the pumpkin and cake mix for about 2 minutes to get it really well combined. We use the devil’s food mix because you cannot taste the pumpkin. However, one time we used the cinnamon swirl cake mix. You could taste the pumpkin with it and it tasted just like PUMPKIN PIE – YUMMM!!!!
